Ingredients
  

  • 1.5 lbs chicken thighs boneless, skinless
  • 1 cup apple cider
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 2 tbsp honey or sugar-free honey
  • 3 cups shredded cabbage mixed
  • 1 cup shredded carrots
  • 1 apple thinly sliced

Equipment

  • Large skillet
  • Mixing bowls
  • Tongs
  • Knife and cutting board

Method
 

  1. Season chicken with salt and pepper.
  2. Sear chicken in olive oil until golden; remove and set aside.
  3. Add garlic, apple cider, vinegar, mustard, and honey to skillet.
  4. Simmer and reduce sauce until thickened.
  5. Return chicken to skillet and coat with glaze.
  6. Toss slaw ingredients together in a bowl.
  7. Serve chicken hot with crisp autumn slaw.

Notes

Sauce thickens as it cools; adjust sweetness to taste.
