Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar packed
  • 1 egg large
  • 1 tsp vanilla extract
Cheesecake Filling
  • 4 oz cream cheese softened
  • 0.25 cup sugar
  • 0.5 cup fresh strawberries chopped

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream butter and sugars until light and fluffy. Add egg and vanilla, mix well.
  3. Gradually mix in flour, baking powder, and salt until dough forms.
  4. Beat cream cheese with sugar until smooth. Fold in chopped strawberries.
  5. Assemble cookies: flatten dough, add cheesecake filling, cover with dough, seal edges.
  6. Bake 12–15 minutes until edges lightly golden. Cool completely on wire racks.

Notes

Chill dough slightly if too soft for shaping.
