Method
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream butter and sugars until light and fluffy. Add egg and vanilla, mix well.
- Gradually mix in flour, baking powder, and salt until dough forms.
- Beat cream cheese with sugar until smooth. Fold in chopped strawberries.
- Assemble cookies: flatten dough, add cheesecake filling, cover with dough, seal edges.
- Bake 12–15 minutes until edges lightly golden. Cool completely on wire racks.
Notes
Chill dough slightly if too soft for shaping.
