Ingredients
  

Shortbread Base & Crumble
  • 2 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 0.25 cup brown sugar packed
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 1 cup unsalted butter cold and cubed
  • 1 tsp vanilla extract
Strawberry Filling
  • 2 cups strawberries chopped, fresh or frozen
  • 1 tbsp lemon juice
  • 1 tbsp lemon zest optional
  • 2 tbsp granulated sugar
  • 2 tsp cornstarch for thickening

Equipment

  • Mixing bowls
  • Pastry cutter or fork
  • 8x8 baking pan
  • Parchment paper

Method
 

  1. Preheat oven to 350°F (175°C) and line an 8x8 pan with parchment paper.
  2. In a large bowl, mix flour, sugars, baking powder, and salt.
  3. Cut in cold butter and vanilla until mixture resembles coarse crumbs.
  4. Press ⅔ of mixture into pan for the crust and reserve the rest for topping.
  5. In another bowl, mix strawberries, lemon juice, zest, sugar, and cornstarch.
  6. Spread strawberry mixture over crust and sprinkle remaining crumble on top.
  7. Bake 35–40 minutes until golden and bubbly.
  8. Cool completely before slicing into bars.

Notes

For a glaze, mix ½ cup powdered sugar with 1 tbsp milk and drizzle over cooled bars.
