Method
- Preheat oven to 350°F (175°C) and line an 8x8 pan with parchment paper.
- In a large bowl, mix flour, sugars, baking powder, and salt.
- Cut in cold butter and vanilla until mixture resembles coarse crumbs.
- Press ⅔ of mixture into pan for the crust and reserve the rest for topping.
- In another bowl, mix strawberries, lemon juice, zest, sugar, and cornstarch.
- Spread strawberry mixture over crust and sprinkle remaining crumble on top.
- Bake 35–40 minutes until golden and bubbly.
- Cool completely before slicing into bars.
Notes
For a glaze, mix ½ cup powdered sugar with 1 tbsp milk and drizzle over cooled bars.
