Method
- Mix almond flour, butter, sweetener, and vanilla, then press into baking dish.
- Bake crust at 350°F (175°C) for 12–15 minutes and cool completely.
- Beat cream cheese and sweetener until smooth, then fold in whipped cream and vanilla.
- Spread cream cheese layer over cooled crust and chill.
- Cook almond milk, cocoa, sweetener, salt, and thickener until pudding thickens.
- Cool slightly and spread pudding over cream layer.
- Whip cream with sweetener and spread as final topping.
- Refrigerate 3–4 hours or until fully set before slicing and serving.
Notes
Chill overnight for the cleanest layers and best texture.
