Ingredients
  

Keto Crust Layer
  • 1.5 cups almond flour
  • 0.25 cup unsalted butter melted
  • 2 tbsp powdered erythritol or monk fruit sweetener
  • 0.5 tsp vanilla extract
Cream Cheese Layer
  • 8 oz cream cheese softened
  • 0.5 cup powdered sugar-free sweetener
  • 1 cup heavy whipping cream whipped
  • 1 tsp vanilla extract
Chocolate Pudding Layer
  • 2 cups unsweetened almond milk
  • 0.5 cup powdered sugar-free sweetener
  • 0.25 cup unsweetened cocoa powder
  • 3 tbsp keto thickener like xanthan gum blend
  • 0.5 tsp salt
  • 1 tsp vanilla extract
Topping Layer
  • 1.5 cups heavy whipping cream
  • 2 tbsp powdered sugar-free sweetener
  • sugar-free chocolate shavings optional garnish

Equipment

Method
 

  1. Mix almond flour, butter, sweetener, and vanilla, then press into baking dish.
  2. Bake crust at 350°F (175°C) for 12–15 minutes and cool completely.
  3. Beat cream cheese and sweetener until smooth, then fold in whipped cream and vanilla.
  4. Spread cream cheese layer over cooled crust and chill.
  5. Cook almond milk, cocoa, sweetener, salt, and thickener until pudding thickens.
  6. Cool slightly and spread pudding over cream layer.
  7. Whip cream with sweetener and spread as final topping.
  8. Refrigerate 3–4 hours or until fully set before slicing and serving.

Notes

Chill overnight for the cleanest layers and best texture.
