Salad
  • 2 lbs small golden potatoes
  • 0.25 cup olive oil
  • 2 tbsp lemon juice
  • 1.5 tsp sumac
  • 0.5 red onion thinly sliced
  • 0.25 cup parsley chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Boil potatoes until fork-tender.
  2. Drain and cut into bite-sized pieces.
  3. Whisk olive oil, lemon juice, sumac, salt, and pepper.
  4. Toss warm potatoes with onion and parsley.
  5. Pour dressing over and mix gently.
