Ingredients
  

Pancakes
  • 1.5 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 0.25 tsp salt
  • 2 eggs large
  • 1 cup coconut milk full-fat
  • 2 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • 0.5 cup shredded coconut sweetened
Coconut Cream Topping
  • 0.5 cup coconut cream chilled
  • 1-2 tbsp maple syrup to taste

Equipment

Method
 

  1. Whisk dry ingredients together in a large bowl.
  2. In another bowl, whisk wet ingredients until smooth.
  3. Combine wet and dry ingredients and fold in shredded coconut.
  4. Cook pancakes on a greased skillet over medium heat until golden on both sides.
  5. Whisk coconut cream with maple syrup and serve over pancakes.

Notes

Do not overmix batter for best texture.
