Ingredients
  

  • 2 large sweet potatoes peeled and diced
  • 2 tbsp olive oil
  • 1 small onion diced
  • 1 cup bell peppers diced
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 0.75 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sweet potatoes and cook for 8–10 minutes, stirring occasionally, until starting to brown.
  3. Add onion and bell peppers; cook until softened.
  4. Stir in garlic, paprika, salt, and pepper; cook until fragrant.
  5. Continue cooking until sweet potatoes are tender and crispy on the edges.
  6. Serve hot, topped with eggs or fresh herbs if desired.

Notes

Use a cast-iron skillet for best browning.
