Ingredients
  

Salad
  • 3 sweet potatoes peeled and cubed
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp smoked paprika
  • 0.25 tsp garlic powder
  • 0.25 red onion thinly sliced
  • 0.25 cup parsley chopped
  • 0.25 cup feta cheese crumbled optional
  • 2 tbsp pumpkin seeds toasted
Dressing
  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes with olive oil and seasonings.
  3. Roast 25-30 minutes until tender and caramelized.
  4. Whisk dressing ingredients together.
  5. Combine roasted sweet potatoes with onion, parsley, feta, and seeds.
  6. Drizzle dressing over salad and toss gently before serving.

Notes

Add nuts or seeds just before serving for best texture. Can be served warm or chilled.
