Ingredients
  

Soup Base
  • 1 cup red lentils rinsed
  • 1 can coconut milk full-fat
  • 3 cups vegetable broth
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 tbsp red curry paste
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 0.5 tsp turmeric
  • 1 tbsp lime juice fresh

Method
 

  1. Sauté onion in oil until softened.
  2. Add garlic, ginger, curry paste, and spices; cook until fragrant.
  3. Stir in coconut milk and vegetable broth.
  4. Add red lentils and simmer 20–25 minutes.
  5. Season with salt and finish with lime juice before serving.

Notes

Adjust curry paste to control heat level.
