Ingredients
  

Curry Noodles
  • 2 chicken breasts thinly sliced
  • 2 packs udon noodles
  • 1 tbsp vegetable oil
  • 4 cloves garlic minced
  • 1 tbsp ginger grated
  • 2 tbsp red curry paste
  • 1 can coconut milk
  • 2 cups chicken broth
  • 1 tbsp soy sauce
  • 1 tsp fish sauce optional
  • 1 red bell pepper sliced
  • 1 tsp chili flakes
  • 1 lime juiced
  • 2 green onions sliced

Method
 

  1. Heat oil in a large pot and sauté garlic and ginger until fragrant.
  2. Add red curry paste and cook for 1 minute to release flavor.
  3. Pour in coconut milk and chicken broth, stirring well.
  4. Add soy sauce, fish sauce, and chili flakes and bring to a simmer.
  5. Add sliced chicken and cook until tender and fully cooked.
  6. Stir in red bell pepper and cook briefly.
  7. Add udon noodles and cook until heated through.
  8. Finish with lime juice and garnish with green onions before serving.

Add vegetables like mushrooms, spinach, or bok choy for extra texture and nutrition.
