Ingredients
  

  • 4 cups green peas fresh or frozen
  • 4 oz pancetta diced
  • 1 pear peeled, cored, and diced
  • 1 shallot finely chopped
  • 2 tbsp unsalted butter
  • 1 tsp fresh thyme leaves
  • salt and pepper to taste
  • 1 tsp honey or maple syrup optional

Method
 

  1. Cook pancetta in a skillet until crispy, then remove and set aside.
  2. Add butter to the pan and sauté shallot until fragrant.
  3. Add diced pear and cook until softened and slightly caramelized.
  4. Stir in peas and cook until heated through, about 3–5 minutes.
  5. Return pancetta to the pan, add thyme, salt, and pepper, and toss gently.
  6. Drizzle with honey or maple syrup if desired, and serve warm.
