Ingredients
  

Main Ingredients
  • 4 cups frozen peas
  • 4 oz pancetta diced
  • 1 pear ripe but firm, diced
  • 2 tbsp butter
  • 1 shallot minced
  • 1 tsp thyme fresh, or 1/2 tsp dried
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • lemon juice optional, a small squeeze
  • fresh thyme for garnish

Method
 

  1. Cook pancetta in a skillet over medium heat until crisp, 4–6 minutes. Remove and set aside.
  2. Add butter to the skillet. Sauté minced shallot 1–2 minutes until softened.
  3. Add diced pear and cook for 3 minutes until lightly caramelized.
  4. Add peas, thyme, salt, and pepper. Cook 4–5 minutes until peas are heated through.
  5. Return pancetta to the skillet and toss to combine.
  6. Add optional lemon, garnish with thyme, and serve warm.

Notes

Use firm pears like Bosc or Anjou so they hold shape when sautéed.
