- Cook pancetta in a skillet over medium heat until crisp, 4–6 minutes. Remove and set aside.
- Add butter to the skillet. Sauté minced shallot 1–2 minutes until softened.
- Add diced pear and cook for 3 minutes until lightly caramelized.
- Add peas, thyme, salt, and pepper. Cook 4–5 minutes until peas are heated through.
- Return pancetta to the skillet and toss to combine.
- Add optional lemon, garnish with thyme, and serve warm.
Notes
Use firm pears like Bosc or Anjou so they hold shape when sautéed.
