Ingredients
  

Coleslaw
  • 4 cups green cabbage shredded
  • 2 cups purple cabbage shredded
  • 1 cup carrots julienned
  • 2 tbsp fresh parsley chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Shred cabbage and carrots.
  2. Combine vegetables in large bowl.
  3. Whisk together olive oil, vinegar, mustard, honey, salt, and pepper.
  4. Pour dressing over vegetables.
  5. Toss thoroughly until coated.
  6. Let rest 10 minutes before serving.

Notes

Best enjoyed fresh or within 3 days. Toss before serving.
