Ingredients
  

  • 2 lbs russet potatoes peeled and diced
  • 6 slices bacon cooked and crumbled
  • 4 tbsp unsalted butter
  • 1 onion diced
  • 3 cloves garlic minced
  • 0.25 cup all-purpose flour
  • 3 cups chicken broth
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1.5 cups cheddar cheese shredded
  • 0.5 cup sour cream

Method
 

  1. Cook bacon until crisp and set aside.
  2. Sauté onion and garlic in butter until softened.
  3. Stir in flour and cook briefly to form a roux.
  4. Add broth and potatoes, simmer until tender.
  5. Mash some potatoes to thicken the soup.
  6. Stir in milk, cream, cheese, and sour cream.
  7. Season and serve with toppings.
