- Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line with parchment.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- In a large bowl, beat together oil, butter, granulated sugar, and brown sugar until creamy.
- Add eggs one at a time, then stir in vanilla extract.
- Gradually fold in dry ingredients until just combined.
- Fold in grated zucchini and optional walnuts or chocolate chips.
- Pour batter into prepared loaf pan and smooth top.
- Bake 50–60 minutes until toothpick comes out clean. Cover with foil if top browns too fast.
- Cool 10–15 minutes in pan, then transfer to wire rack to cool completely.
Notes
For extra flavor, sprinkle cinnamon sugar on top before baking.
