Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp ginger optional
Wet Ingredients
  • ½ cup vegetable oil
  • ½ cup unsalted butter softened
  • 1 cup granulated sugar
  • ½ cup brown sugar packed
  • 3 eggs large
  • 1 tsp vanilla extract
  • 2 cups grated zucchini about 2 medium
  • ½ cup chopped walnuts optional
  • ½ cup mini chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line with parchment.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In a large bowl, beat together oil, butter, granulated sugar, and brown sugar until creamy.
  4. Add eggs one at a time, then stir in vanilla extract.
  5. Gradually fold in dry ingredients until just combined.
  6. Fold in grated zucchini and optional walnuts or chocolate chips.
  7. Pour batter into prepared loaf pan and smooth top.
  8. Bake 50–60 minutes until toothpick comes out clean. Cover with foil if top browns too fast.
  9. Cool 10–15 minutes in pan, then transfer to wire rack to cool completely.

Notes

For extra flavor, sprinkle cinnamon sugar on top before baking.
