- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream butter and sweetener until light and fluffy.
- Add egg and vanilla extract and mix thoroughly.
- Whisk together almond flour, baking soda, and salt.
- Gradually mix dry ingredients into wet until dough forms.
- Fold in sugar-free chocolate chips.
- Scoop onto baking sheets, flatten slightly, and bake 10–12 minutes.
- Cool on baking sheet 5 minutes, then transfer to wire rack.
