Ingredients
  

Cookie Dough
  • 2 cups almond flour
  • 0.5 cup unsalted butter softened
  • 0.5 cup erythritol or monk fruit sweetener
  • 1 large egg
  • 1 tsp vanilla extract
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.75 cup sugar-free chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream butter and sweetener until light and fluffy.
  3. Add egg and vanilla extract and mix thoroughly.
  4. Whisk together almond flour, baking soda, and salt.
  5. Gradually mix dry ingredients into wet until dough forms.
  6. Fold in sugar-free chocolate chips.
  7. Scoop onto baking sheets, flatten slightly, and bake 10–12 minutes.
  8. Cool on baking sheet 5 minutes, then transfer to wire rack.
