  • 1 lb ground turkey
  • 1 cup white rice uncooked
  • 2 cups chicken broth
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 0.5 cup carrots diced
  • 0.5 cup peas
  • 0.5 cup red bell pepper diced
  • 2 tbsp soy sauce
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika

Method
 

  1. Sauté onion and garlic in olive oil.
  2. Brown ground turkey completely.
  3. Add vegetables and seasonings.
  4. Stir in rice and broth; bring to boil.
  5. Cover and simmer until rice is tender.
  6. Fluff and garnish before serving.

Notes

For brown rice, increase cooking time and broth slightly.
