Ingredients
  

  • 12 oz mushrooms finely chopped
  • 1 onion finely chopped
  • 1 carrot diced
  • 1 zucchini diced
  • 2 cups spinach chopped
  • 1 sheet puff pastry thawed

Method
 

  1. Cook onions, garlic, mushrooms, and vegetables until moisture evaporates.
  2. Cool mixture completely.
  3. Spread Dijon on puff pastry and add filling.
  4. Wrap pastry around filling and seal.
  5. Brush with egg wash and bake 30–35 minutes.

Notes

Cooling the filling prevents soggy pastry.
