Ingredients
  

Pasta & Sauce
  • 12 oz pasta spaghetti, fettuccine, or penne
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 can diced tomatoes 14 oz or tomato puree
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan cheese grated
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper
  • 1/2 tsp crushed red pepper flakes optional
  • 2 tbsp fresh basil chopped

Equipment

  • Large pot
  • Skillet

Method
 

  1. Cook pasta in salted water until al dente, reserve 1/2 cup pasta water.
  2. Sauté garlic in olive oil for 1–2 minutes until fragrant.
  3. Add diced tomatoes or tomato puree and simmer 5–7 minutes until thickened.
  4. Stir in heavy cream and Parmesan cheese, adjusting consistency with reserved pasta water.
  5. Add pasta to sauce and toss to coat. Season with salt, pepper, and optional red pepper flakes.
  6. Garnish with fresh basil and additional Parmesan before serving.

Notes

For extra flavor, sauté onions with garlic or add a splash of white wine to the sauce.
