- Cook pasta in salted water until al dente, reserve 1/2 cup pasta water.
- Sauté garlic in olive oil for 1–2 minutes until fragrant.
- Add diced tomatoes or tomato puree and simmer 5–7 minutes until thickened.
- Stir in heavy cream and Parmesan cheese, adjusting consistency with reserved pasta water.
- Add pasta to sauce and toss to coat. Season with salt, pepper, and optional red pepper flakes.
- Garnish with fresh basil and additional Parmesan before serving.
Notes
For extra flavor, sauté onions with garlic or add a splash of white wine to the sauce.
