- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk together flour, baking soda, and salt in a bowl.
- Beat butter and sugars until light and fluffy. Add egg and vanilla; mix until smooth.
- Stir in dry ingredients until combined. Fold in chocolate chips and white chocolate chunks.
- Scoop dough onto baking sheets and top with sparkling sugar if desired.
- Bake 10–12 minutes or until golden at edges. Cool 5 minutes, then transfer to rack.
- Drizzle melted white chocolate over cooled cookies. Add sprinkles and dust with powdered sugar.
